Abstract
La presente investigación se realizó en la ciudad de Guadalajara de Buga para el establecimiento Empanadas Don Manuel, con el fin de establecer si es viable llevar a cabo un plan de mejora que contrarreste el estancamiento que ha tenido el negocio en los últimos años para ello se pretende incluir un nuevo producto en su catálogo existente, pero en esta ocasión en lugar de un producto frito, se realizara la producción de empanadas precocidas por paquete con el fin de llegar a otros nicho de mercado y atender todo tipo de eventos y hacer crecer el negocio con el mismo sabor característico con el que se ha mantenido en el gusto de sus clientes tradicionales . Esta investigación recopila información de diferentes antecedentes de otras investigaciones que sirvieron de punto de partida para darle camino solido a la misma, también se recopilaron datos bibliográficos que en conjunto con algunos trabajos de campo, ayudaron a la solución del interrogante principal y otros que surgen alrededor de este durante el desarrollo y termino de la investigación; realizando trabajo de campo en varias áreas posibles de la producción de la empanada precocida (encuesta, valoración de costos, gastos, balances generales proyectados, estado de resultado con ventas proyectadas etc.) con el único fin de tener una respuesta solida al interrogante o problema antes mencionado.
El desarrollo de la encuesta permitió llegar a conclusiones pertinentes al desarrollo de la investigación pues dio un esbozo de cuanta aceptación tenía el nuevo producto entre los encuestados además de las preferencias en empaque presentación sabor y demás, los datos números que se estudiaron fueron con el fin de evaluar en términos monetarios todo lo referente a la producción, desde su inversión en maquinaria hasta la fuerza productiva humana y por ende los costos de producción, así como también el análisis proyectado de ventas que le permitió a los evaluadores observar cuantos serían los ingresos, cuanto tiene que producir y vender para generar ganancias, en qué punto se recuperaría la inversión y determinar cuánto se iba en gastos mensuales; posteriormente se realizó un manual de funciones que marco los pasos a seguir en el establecimiento tanto de los actuales trabajadores como de los futuros.
Con el estudio mencionado se llegó a la conclusión de que es completamente viable la introducción de este producto nuevo si se tienen en cuenta todos los aspectos y se le da un buen apalancamiento con una estrategia de marketing agresiva (redes sociales, promociones, medios de comunicación tradicionales, muestras gratis), que permita impactar a clientes frecuentes del establecimiento y a nuevos para así fidelizarlos con la aprobación del producto una vez consumido.
The present investigation was carried out in the city of Guadalajara de Buga for the Empanadas Don Manuel establishment, in order to establish if it is feasible to carry out an improvement plan that counteracts the stagnation that the business has had in recent years. intends to include a new product in its existing catalogue, but this time instead of a fried product, the production of pre-cooked empanadas per package will be carried out in order to reach other market niches and attend all kinds of events and grow the business with the same characteristic flavor with which it has remained in the taste of its traditional clients. This investigation collects information from different backgrounds of other investigations that served as a starting point to give it a solid path, bibliographic data was also collected that, together with some field work, helped to solve the main question and others that arise around it. of this during the development and end of the investigation; carrying out field work in several possible areas of the production of the pre-cooked empanada (survey, cost valuation, expenses, projected general balances, income statement with projected sales, etc.) with the sole purpose of having a solid answer to the question or problem aforementioned. The development of the survey allowed us to reach conclusions pertinent to the development of the investigation, since it gave an outline of how much acceptance the new product had among the respondents, in addition to the preferences in packaging, presentation, flavor and others, the data numbers that were studied were for the purpose of to evaluate in monetary terms everything related to production, from its investment in machinery to the human productive force and therefore production costs, as well as the projected sales analysis that allowed the evaluators to observe how much the income would be, how much you have to produce and sell to generate profits, at what point the investment would be recovered and determine how much was left in monthly expenses; Subsequently, a functions manual was prepared that outlined the steps to follow in the establishment for both current and future workers. With the aforementioned study, it was concluded that the introduction of this new product is completely viable if all aspects are taken into account and good leverage is given with an aggressive marketing strategy (social networks, promotions, media traditional, free samples), which allows to impact frequent customers of the establishment and new ones in order to retain them with the approval of the product once consumed.
