Abstract
En Colombia se cuenta con herramientas fundamentales en inocuidad de los alimentos, como el registro sanitario; sin embargo, se desconoce el grado de conocimiento y relevancia que le dan los consumidores a este importante requisito de los productos alimentarios que se distribuyen en los diferentes establecimientos de comercio en el país. El problema se agudiza con los resultados de seguimiento a establecimientos de fabricación de alimentos publicados por el INVIMA, que arrojan como resultado para el trimestre de enero a marzo del 2024, más de 50 procesos sancionatorios asociados con incumplimiento de normas de sanidad, registro sanitario vencidos, falsificación o inexistencia del mismo (Invima, 2024).
Por tanto, es fundamental desarrollar investigaciones orientadas a dilucidar el grado de conocimiento y la importancia que le da el consumidor final al registro sanitario, como herramienta de decisión en la adquisición de productos que no pongan en riesgo la salud humana y que sean fabricados a partir de proceso industriales que favorezcan la inocuidad del alimento manufacturado.
In Colombia, there are fundamental tools in food safety, such as the sanitary registry; however, the degree of knowledge and relevance that consumers give to this important requirement of food products that are distributed in the different commercial establishments in the country is unknown. The problem is exacerbated by the results of monitoring food manufacturing establishments published by INVIMA, which show as a result for the quarter from January to March 2024, more than 50 sanctioning processes associated with non-compliance with health regulations, expired sanitary registry, falsification or non-existence of it (Invima, 2024). Therefore, it is essential to develop research aimed at elucidating the degree of knowledge and the importance that the final consumer gives to the sanitary registry, as a decision-making tool in the acquisition of products that do not put human health at risk and that are manufactured from industrial processes that favor the safety of manufactured food.
