Abstract
En el siguiente documento se presentan los resultados de la investigación realizada a
empresas pandearroceras de los municipios de Acacias, Restrepo, San Martín de los Llanos y
Villavicencio pertenecientes al departamento del Meta, Colombia, la cual se realizó mediante un
enfoque cualitativo e histórico descriptivo y que tuvo como objetivo la construcción el estado del
arte de la evolución empresarial de los productores de pan de arroz; se logra realizar una
caracterizaron de las empresas pandearroceras, identificando aspectos como: origen, antigüedad,
ubicación, al igual que algunos datos relevantes de la industria pandearrocera; en segundo lugar,
se realiza una reconstrucción historia de las empresas productoras de pan de arroz, identificando
la historia de emprendimiento y creación de las catorce empresas entrevistadas como un estudio
de caso; finalmente, se construye un mapa de tiempo mediante el cual se puede identificar la
evolución que ha tenido la producción de pan de arroz en el departamento del Meta.
Como resultado, se destaca que la producción del pan de arroz, tradición cultural
gastronómica del departamento del Meta, es significativa en esta región y se evidencia un
proceso de evolución de este grupo de empresas, donde el 43% de las empresas entrevistadas son
de origen familiar, contando con un índice de formalidad del 93%, es decir, empresas que se
encuentran registradas ante Cámara de Comercio de Villavicencio, y 43% de las empresas llevan
más de 21 años de funcionamiento, demostrando de esta manera su estabilidad en el mercado
regional.
The following document presents the results of the research carried out to pandearroceras companies in the municipalities of Acacias, Restrepo, San Martin de los Llanos and Villavicencio belonging to the department of Meta, Colombia, which was carried out through a qualitative and historical descriptive approach and which aimed at building the state of the art of business evolution of rice bread producers; it is possible to make a characterization of pandearroceras companies, identifying aspects such as: origin, seniority, location, as well as some relevant data of the pandearrocera industry; secondly, a history reconstruction of rice bread producers is carried out, identifying the history of entrepreneurship and creation of the fourteen companies interviewed as a case study; Finally, a time map is constructed through which the evolution of rice bread production in the department of Meta can be identified. As a result, it stands out that the production of rice bread, gastronomic cultural tradition of the department of Meta, is significant in this region and evidences a process of evolution of this group of companies, where 43% of the companies interviewed are of origin family, with a formality index of 93%, that is, companies that are registered with the Chamber of Commerce of Villavicencio, and 43% of the companies have been operating for more than 21 years, thus demonstrating their stability in the market regional.
