Abstract
La perdurabilidad de los restaurantes tradicionales en Ibagué no son solo lugares para cenar, son fundamentales para el sector gastronómico, ya que estos establecimientos representan una importante fuente de empleo a las familias Tolimenses, tiene un gran desarrollo económico y preservación del legado cultural de la ciudad. Este trabajo tiene como propósito poder identificar y analizar las estrategias y factores que han permitido la perdurabilidad de algunos restaurantes tradicionales frente a los grandes cambios en la trayectoria, la competencia y las nuevas exigencias del mercado. Para cumplir con este objetivo, se realizó una revisión bibliográfica exhaustiva y un proceso de sistematización de muchas experiencias, el cual resultó fundamental para recolectar, organizar y poder interpretar la cantidad de información obtenida. La sistematización permitió no solo identificar las excelentes prácticas y lecciones aprendidas en torno a la gestión, la innovación, la calidad del servicio y la identidad gastronómica, sino también poder entender de manera más profunda los procesos internos que favorecen la permanencia de estos negocios.
En conclusión, este proyecto evidencia que la combinación entre la tradición y la adaptación al cambio, apoyada en la sistematización como herramienta de análisis y aprendizaje, se convierte en un elemento clave para garantizar la estabilidad, sostenibilidad y crecimiento de los restaurantes tradicionales en la ciudad de Ibagué.
The enduring presence of traditional restaurants in Ibagué is not just about places to dine; it's fundamental to the gastronomic sector. These establishments represent a significant source of employment for families in Tolima, contribute greatly to economic development, and help preserve the city's cultural heritage. This study aims to identify and analyze the strategies and factors that have allowed some traditional restaurants to survive despite significant changes in their trajectory, competition, and new market demands. To achieve this objective, a comprehensive literature review and a systematization process of numerous experiences were conducted. This process proved essential for collecting, organizing, and interpreting the wealth of information obtained. Systematization not only allowed for the identification of best practices and lessons learned regarding management, innovation, service quality, and gastronomic identity, but also provided a deeper understanding of the internal processes that contribute to the longevity of these businesses. In conclusion, this project demonstrates that the combination of tradition and adaptation to change, supported by systematization as a tool for analysis and learning, becomes a key element to guarantee the stability, sustainability, and growth of traditional restaurants in the city of Ibagué.
