Abstract
El presente trabajo es un plan de negocios realizado sobre las bebidas artesanales
como lo es el sabajón; la cual puede ser utilizada en fechas especiales en algunas regiones
del mundo. Se ha elaborado este proyecto ya que tiempo atrás, las grandes empresas
enfocaron su esfuerzo para poder alcanzar a un consumidor global y un gran impacto socio
económico.
El sabajón en el territorio colombiano ha tenido gran impacto debido a que cada uno
de sus ingredientes lo convierten en un sabor exquisito y gustoso al paladar de los
colombianos; que es capaz de competir en el mercado de aperitivos y a su vez se convierte
en un producto autóctono que representa a cada región del país.
En Colombia cada vez las bebidas artesanales a base de leche crecen en el mercado,
por su sabor, calidad, por su mínimo grado de alcohol, por ser considerado un aperitivo, “El
consumo de estas bebidas en Colombia se ha venido reactivando en los últimos periodos
superando ventas a un 52%.” (Pava y Rosales, 2018, p.4). Por lo tanto, el sabajón es un
aperitivo que se encuentra en constante crecimiento en el mercado como son los
santanderes y pasto donde el sabajón lo venden como un producto artesanal.
El sector del Sabajón ha sido el turismo quién lo ha impulsado a formar un producto
representativo de las diferentes ciudades donde se comercializa. Para Niño (2019) planteaba
que el sabajon era conocido por ser un aperitivo alcohólico, alimenticio y exótico.

This project has been developed since long ago, large companies focused their efforts to be able to reach a global consumer and a great socio-economic impact. The sabajon in the Colombian territory has had a great impact because each of its ingredients make it an exquisite and tasty flavor to the Colombian palate; which is capable of competing in the snack market and in turn becomes an indigenous product that represents each region of the country. In Colombia, artisanal milk-based drinks are growing in the market every time, due to their taste, quality, due to their minimum degree of alcohol, because they are considered an aperitif. periods exceeding sales by 52%.
