Abstract
El departamento del Meta cuenta con el potencial agroindustrial para dinamizar su
desarrollo económico a través del fortalecimiento de industrias o sectores emergentes que se
visualizan como futuros actores principales en el mercado global. Tal es el caso del pan de arroz,
que como producto típico del departamento ha logrado tener una evolución empresarial
significativa a través del tiempo y hoy tiene un valor más que tradicional en la economía
metense. Ante esa importancia y en el marco de la protección de las prácticas culinarias
tradicionales como herramienta para salvaguardar lo autóctono y cultural surgió la necesidad de
contar con un estudio de su mercado actual
Frente a la cantidad de información limitada sobre el pan de arroz como sector, ésta
investigación profundizó sobre sus aspectos relevantes, su lugar en el mercado, las perspectivas
de los consumidores habituales y ocasionales, sus ventajas y oportunidades, además del rol que
tiene como producto tradicional en mercados internacionales. Para la contextualización del
mercado y contar con un conocimiento más preciso se realizaron encuestas de opinión
directamente a la comunidad, turistas y distribuidores del producto. Los resultados obtenidos
muestran el valor que los consumidores tienen hacia el pan de arroz como producto insignia del
departamento del Meta, aunque se resaltan los aspectos que deben mejorarse para mejorar aún
más el producto y lanzarlo a conquistar mercados internacionales.
The department of Meta has the agro-industrial potential to boost its economic development through the strengthening of emerging industries or sectors that are seen as future leading players in the global market. Such is the case of rice bread, which as a typical product of the department has managed to have a significant business evolution over time and today has a more Than traditional value in the economy of Meta. Given this importance and within the framework of the protection of traditional culinary practices as a tool to safeguard the autochthonous and cultural, the need arose to have a study of its current market. Faced with the limited amount of information on rice bread as a sector, this research delved into its relevant aspects, its place in the market, the perspectives of regular and occasional consumers, its advantages and opportunities, as well as its role as a product traditional in international markets. For the contextualization of the market and to have a more precise knowledge, opinion polls were made directly to the community, tourists and distributors of the product. The results obtained show the value that consumers have towards rice bread as a flagship product of the department of Meta, although the aspects that must be improved are highlighted to further to improve the product and launch it to conquer international markets

Meta, enfocado en los municipios de Villavicencio, Restrepo y San Martín, para la
identificación de retos y estrategias.
