Abstract
Este estudio presenta una estrategia para utilizar de manera eficiente los residuos de aguacate generados en la compañía Fresh Colombia, con el fin de producir aceites esenciales y lograr un manejo sostenible de estos desechos orgánicos. La compañía reporta una generación semanal de 192000 kg de residuos de aguacate, los cuales son enviados a una compostera relleno sin ningún aprovechamiento. Durante la caracterización de estos residuos, se determinó que la pulpa del aguacate es el componente principal (50%), seguido por la semilla (27.5%) y la cáscara (22.5%). Estudios previos han demostrado que la pulpa del aguacate contiene un alto porcentaje de aceite (5-30%), el cual posee propiedades valiosas tanto en el ámbito alimentario como medicinal, lo que lo hace atractivo para su aprovechamiento. Se han identificado diversas técnicas de extracción de aceite, incluyendo métodos industriales, artesanales y analíticos, que permiten obtener la máxima cantidad de aceite sin comprometer su calidad. De estas técnicas, se seleccionó el método artesanal para extraer el aceite de aguacate, obteniéndose un rendimiento del 2.1% (en base a la pulpa)
This study presents a strategy to efficiently use the avocado waste generated in the company Fresh Colombia, in order to produce essential oils and achieve a sustainable management of this organic waste. The company reports a weekly generation of 192,000 kg of avocado waste, which is sent to a landfilled compost bin without any use. During the characterization of these residues, it was determined that the avocado pulp is the main component (50%), followed by the seed (27.5%) and the peel (22.5%). Previous studies have shown that the avocado pulp contains a high percentage of oil (5-30%), which has valuable properties both in the food and medicinal fields, which makes it attractive for its use. Various oil extraction techniques have been identified, including industrial, artisan and analytical methods, which allow obtaining the maximum amount of oil without compromising its quality. Of these techniques, the artisanal method was selected to extract avocado oil, obtaining a yield of 2.1% (based on pulp).
