En la Vereda Cuatro Esquinas del municipio del Carmen de Apicalá al oriente del Tolima colombiano, existe producción agrícola de Guayaba, fruta que se evidencia, no se consume en la misma proporción que se produce, desaprovechándose en varios casos debido a cambios presentados en la cosecha y pos-cosecha. El objetivo de la presente investigación es desarrollar un estudio de viabilidad y factibilidad, donde se pueda reconocer la utilidad económica, empresarial y emprendedora de fabricar y comercializar mermelada artesanal.
La investigación es de tipo descriptiva con un enfoque cuantitativo, analizando las variables correspondientes al análisis del mercado, las condiciones de ingeniería del proyecto y la viabilidad económica y financiera del proyecto. El instrumento que sirvió para recolectar la información primaria es la encuesta, y la recolección de datos secundarios se realizó a través de la consulta y revisión bibliográfica en bases de datos especializadas. Se determinó la población objetivo con base en la información suministrada por el DANE (2021), que para el caso es de 2.530 hogares en Carmén de Apicalá y la muestra a través de muestreo probabilístico aleatorio simple de 263 hogares.
Los resultados de la investigación dan cuenta del análisis del mercado consumidor, el mercado competidor, la propuesta del producto y el mercado competidor. Desde el estudio técnico se obtuvo la localización, tamaño e ingeniería del proyecto. Del estudio financiero se conocieron las inversiones fijas, costos y gastos operativos y administrativos, flujo de fondos, balance general y estado de pérdidas y ganancias proyectado. El análisis económico y financiero permitió conocer la rentabilidad del negocio, la TIR y el VPN. Como conclusión puede decirse que los resultados de la evaluación económica y financiera del proyecto generan confianza en los inversionistas del proyecto al demostrar su rentabilidad pues muestra que los dineros invertidos rentan a una tasa superior a la de Oportunidad.

know the profitability of the business, the IRR and the NPV.
In conclusion, it can be said that the results of the economic and financial evaluation of the
project generate confidence in the investors of the project by demonstrating its profitability, since
it shows that the money invested earns at a rate higher than the Opportunity rate.
